sweet cream corn


I know what you're thinking- Cream corn? Guess what. AMAZING. "You'll like this more than like, anything," my wife warns me.

We purchased a few ears of sweet corn from a local stand this weekend, and my wife used them to make cream corn from a recipe on shutterbean. The lime in this recipe definitely sets it apart from anything I've experienced. So delicious. It reminded me of eating lime-flavored tortilla chips with corn salsa, which I love.

Combined with apricot/peach jam and balsamic vinegar as a glaze over the chicken, it was a perfect summertime dinner. (with a fun summertime drink to go with it)

dreamy creamy


This morning my wife and I drove out to our land to have breakfast at our picnic table. It had just rained last night however, so it was pretty wet and buggy out there. Dang it! So, instead we found a park in town to sit on a picnic table at. It was a beautiful morning, sunny and 65 degrees. I stopped to grab a gas station coffee, while my wife was satisfied with just water. We ate strawberry scones that she had made the night before, and put in the oven this morning. They were moist and superb. "dreamy creamy," I said. She said, "What? Did you know that is what these are called?!" I gave in. "Yes," I said, "I saw the recipe on smitten kitchen up on your computer this morning."

quiet side


The last couple of weeks have been SO NICE OUT! This evening we took a bowl full farro my wife cooked up (we were first-time farro eaters, and it was delicious with roasted sweet potatoes, broccoli and fetta) and a bottle full of wine to the flower gardens along the river near our apartment and enjoyed the amazing weather. This weekend is move-in weekend at the university here in town, and you could hear the faint sounds of hootin' and hollerin' across the river from the campus. Ah, to be young again. We'll just stick to the quiet side of the river this evening.

apple crisp time


I picked apples from my wife's parents' apple tree this weekend, and created my very first apple crisp from a recipe Joy the Baker used. I must say it was fantastic, but I'm pretty partial to apple crisp. I can't get enough of the stuff. Paired with homemade vanilla ice cream my wife made, I thought I was going melt along with the ice cream.

heirloom tomato tray


My wife and I drove down to the farmer's market in the city last weekend to find some good veggies, and it didn't disappoint. Such bright colors everywhere from the tomatoes, carrots, peppers, radishes, etc. Fun! My wife was particularly interested in the tomatoes available, and scooped up a few different varieties, including some heirloom tomatoes.

Today we sliced them up to try them out on some baguette slices and yet another batch of homemade ricotta. These tomatoes definitely had their own distinct flavors, and they were all good.

It's amazing how much bread you can eat when they're sliced up in small pieces, especially with wine.

blueberry frozen yoghurt

It's been exceptionally hot and humid here in the Midwest for as long as I can remember it seems, at least all of July and August so far anyway. All the ice cream helps, but frozen yoghurt almost feels even just a little bit more refreshing.

My wife made blueberry frozen yoghurt this week, and I saw a whole quart of yoghurt disappear from the fridge, so it's no joke. There were A LOT of blueberries mixed in, and we both agreed that it could've used about half as many. Delicious all the same though.

creamier hummus


I learned today why my wife's hummus is so much creamier than hummus from the store. She called me into the kitchen to give her a hand removing the outside of the chick peas. I didn't know chick peas had an 'outside.' While it looks incredibly tedious, they separate quite easily and help make the hummus very creamy. This particular red pepper and sun-dried tomato hummus was no exception. So, if you ever try to make your own, make sure and take a few extra minutes to make it much more delicious!

a new invention


So, I think I invented something new! My wife made s'mores ice cream this week. She also had made graham crackers as part of a gift for her friend recently. Instead of the usual sugar cone, I had the great idea to sandwich the s'mores ice cream inside the homemade graham crackers. It's more than an ice cream sandwich, it's like a s'more within a s'more! Yep, I'm pretty smart.

she's a techie

Considering my wife's domestic-type hobbies and interests, you might not guess that she's also a whiz with all things computer-related as well. I've mentioned that I even find myself needing to be on top of my game to make sure she isn't 'out-geeking' me.

Well, this week our wireless internet router broke. Gasp! We were without internet! (We do love our internet) Days later, the new router came via UPS while my wife was home. I was sure I'd be receiving a phone call from her when it arrived asking how to set it up, but I shouldn't have been so sure. I came home to a brand new router, plugged in, and serving up our beloved wireless internet to both of our laptops.

"Oh, I just followed the directions," she said. I was impressed. She's somethin alright.
