healthy pancakes

My wife has never been a big fan of pancakes, definitely more of a waffle girl. I woke up to pancakes being made on the stove this morning nonetheless, as she said she just thought she would give it a try. "They're 'healthy' pancakes, so we'll see if they turn out to be any good."

Why she ever doubts herself, I have no idea. Despite being made primarily with oats, whole wheat, and flaxseed they were quite honestly as good as any pancake I had ever had. (Hard to say if they were the BEST or not, only because pancakes are all pretty similar in texture and taste aren't they?) Although, I can certainly say they were way better than my dad's "famous" pancakes, which I think are only famous to himself.

Anyway, while my wife "wasn't" a big fan of pancakes, she seems to be now. She loved them as well.

friend's birthday

My wife doesn't just go the extra mile for friends she hasn't seen in awhile, she also puts extra care into making her friends smile whom she sees often.

Her good friend is turning her age this week, 28, and she's sending her a package full of goodies including a homemade card, homemade marshmallows, homemade graham crackers, fancy chocolate (all for s'mores of course), a small set of pink striped straws for fun, and a little cloth banner she made for her friend to use for her scrap booking hobby.

My friends are lucky if I even remember their birthday. I need to get better at that.

"ooey" gooey

Yet another ice cream flavor whipped up... Are you sick of them yet? Because I'm not.

"Ooey" Gooey Butter Cake Ice Cream (honey-buterscotch-soaked cake and cream cheese ice cream) is the treat of the week this time. The name doesn't actually contain the word 'Ooey', but my wife thinks it does. This one is from a new book I see in the kitchen called "jeni's splendid ice creams at home."

our own wildlowers

We drove out to the land we own outside of town (that I haven't written about very much to this point I just realized) to see how things were looking. I had planted prairie grass and wildflowers on 13 acres last year, and have been anxiously waiting to see how they would come up. To my amazement there were wildflowers everywhere! Nothing had really come up to this point, but it would seem that the last big heat wave provided the extra boost. My wife picked this beautiful bunch of wildflowers. She was very happy to see that the land we are planning to build our home on one day is so pretty!

oreo ice cream

My go-to treat choice at Dairy Queen has always been the Oreo Blizzard. I don't know that I'll ever be able to look at it the same way however. This week my wife made homemade Oreo ice cream, which blew my mind. It was so amazing I was speechless. "How could it be THAT much better than DQ's?", you ask? Well, you could really taste the stuffing of the Oreo cookie, not just the cookie part of the cookie mixed in with the ice cream. The flavor was very creamy and fantastic.

Even if you don't make your own ice cream, I would highly recommend crumbling up your own Oreo cookies into some vanilla ice cream to make this classic treat even better.

granola greetings

My wife hasn't seen a couple of her good friends in a long while so she is sending them both a random card and gift, both homemade of course. The cute cards are accompanied by a small bagful of granola (which I've tasted personally and could say it's my favorite granola ever- very flavorful and goes great with some plain yogurt, honey and fruit)

My wife does have a Facebook account, but isn't very active on it at all. She'd rather take the time and send friendly hellos her own way.

midnight in paris

We saw this movie last night- even driving an hour to see it in the nearest 'select theater' for something fun to do. It was great! We both really enjoyed it. It's not your typical predictable romantic comedy. Written and directed by Woody Allen, it's a bit quirky, with some of our favorite actors and actresses starring in it. The many fun and charming scenes from Paris were icing on the cake.

I do a pretty solid Owen Wilson impression now as it turns out, and my wife can't seem to help but giggle her ass off when I do it. So, I have a new weapon in my arsenal to combat her stare when I forget to take the garbage out.

fun 4th and 5th

I hope everyone had a fun 4th of July weekend. I know I did. (too much fun) I didn't even get a chance to take all of the pictures I wanted I was having so much fun. As expected there were delicious treats galore, like a triple berry gallete served with homemade vanilla ice cream (indescribably good), and chocolate-dipped Rice Krispie bars with sprinkles on a stick in fun packaging!

The fun didn't stop with the fireworks though. I can usually count on July 5th for fun food as well, and sure enough, today my wife made root beer floats to go with homemade pizza. I always eat/drink my ice cream/root beer too fast and get too full right away. Argghh! This pizza was really really good though. It had a crispier crust than I typically have. I'm told it's from Jim Lahey's book.

4th weekend

Everyone have a great holiday weekend! I'll be up at a rented lake cabin with the wife and in-laws, and there's sure to be lots of fun and delicious treats.
