I'll go ahead and assume we needed to use up the asparagus that we used for the pizza last week. A very savory brunch dish, this particular asparagus hash my wife made comprised of fried sweet potatoes, bacon and asparagus topped with a fried egg. I was naughty, and poured myself a shallow glass of merlot leftover from the bottle we cracked yesterday. I just don't see why a guy can't have a little vino at 10am. In any case, I'd highly recommend this dish from Smitten Kitchen.
